Classic Scones
The best scones ever, from England...
ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 4 ounces unsalted butter
- 1 cup raisins (or other dried fruit)
- 2 tablespoons sugar
- 1 egg yolk
- 3/4 cup buttermilk

1) Combine flour, baking powder, baking soda, nutmeg, and salt. Mix well. Cube butter and work in with fingers until pea-sized pieces form.

2) Stir in raisins and sugar. Whisk together egg yolk and buttermilk and stir into mixture.

3) Turn out dough on floured surface and knead 10-12 times. Cut in half and pat each half into 6-inch circles. Slice each circle into six wedges.

4) Transfer wedges in a circle to ungreased baking sheet.

5) Bake at 375 degrees for 18-22 minutes or until lightly browned.
