Beef Stroganoff

ingredients

  • 1 cup sliced mushrooms
  • 2 tablespoons butter
  • 1 thinly sliced medium yellow onion
  • 1 1/2 lb. sirloin steak, cut into narrow strips
  • 2 cups beef bouillon
  • 2 tablespoons flour
  • 2 tablespoons sherry, optional
  • 2 tablespoons tomato paste
  • 1 teaspoon dry mustard
  • 2/3 cup sour cream
  • seasoned rice, prepare per package directions (enough for 4-6 servings)

    Saute mushrooms in butter, set aside. Saute onions, add 2 tablespoons butter and brown the beef. Add the flour and bouillon, tomato paste, and dry mustard. Simmer until meat is tender. Five minutes before serving time, add sherry and sour cream. Serve over seasoned rice.
