Pumpkin Pie

ingredients

  • 1 can pumpkin
  • 1/2 C. brown sugar
  • 1/2 C. sugar, plus 6 T.
  • 1/2 C. milk
  • 1/2 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 3 eggs, separated
  • 1 package Knox gelatin
  • Graham Cracker Pie Crust:
  • Roll 1 pkg Graham crackers into crumbs. Add 1/4 C sugar and 1/4 C melted butter. Blend well with a fork.
  • Press into pie pan and bake 8-10 minutes at 375°.

    Beat egg whites in a glass bowl until stiff. Add 6 T sugar one at a time and chill in fridge.

    Put egg yolks in saucepan, beat slightly. Add sugars, pumpkin, spices and milk. Stir and cook until it boils. Turn off heat. Soak gelatin for 5 minutes in 1/4 cup cold water. Mix into hot pumpkin mixture. Let cool on counter.

    Add merengue to cooled pumpkin mixture. Fill graham cracker pie crust and refrigerate overnight.
