Pumpkin Pie
ingredients
- 1 can pumpkin
- 1/2 C. brown sugar
- 1/2 C. sugar, plus 6 T.
- 1/2 C. milk
- 1/2 tsp. ginger
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 3 eggs, separated
- 1 package Knox gelatin
- Graham Cracker Pie Crust:
- Roll 1 pkg Graham crackers into crumbs. Add 1/4 C sugar and 1/4 C melted butter. Blend well with a fork.
- Press into pie pan and bake 8-10 minutes at 375°.

Beat egg whites in a glass bowl until stiff. Add 6 T sugar one at a time and chill in fridge.

Put egg yolks in saucepan, beat slightly. Add sugars, pumpkin, spices and milk. Stir and cook until it boils. Turn off heat. Soak gelatin for 5 minutes in 1/4 cup cold water. Mix into hot pumpkin mixture. Let cool on counter.

Add merengue to cooled pumpkin mixture. Fill graham cracker pie crust and refrigerate overnight.
