Rice and Beans
A great weekday meal ~ delicious and healthy.
ingredients
- 1 large can black beans, drained
- 2 cloves of garlic, minced
- 1 red or green pepper chopped
- 1 onion, chopped (optional)
- 1 packet sofrito spice
- 1 15 oz. chopped tomatoes
- olive oil
- 4 cups cooked rice
directions

Saute garlic in 1 tbsp. olive oil for one minute. Add pepper and onion. Cook until pepper and onion are soft.

Add black beans, sofrito and tomatoes.

Cook on medium/low for 15 minutes.

Serve over cooked rice.
