Honey-Baked Ham Panini with Shaved Apple Salad
Debbie and Ron gave me a Panini maker for my birthday a couple years ago, and we have gone crazy with Paninis! We found this recipe and fell in love with it. The shaved apple salad is a must, and the pumpernickel bread gives the sandwich a nice “bite” ha ha!
ingredients
- 1 pound honey-baked ham, sliced
- 8 slices Swiss cheese
- 6 ounces baby spinach
- Whole grain mustard
- Shaved Apple Salad - see below for ingredients
- olive oil
- 8 slices pumpernickel bread
- Shaved Apple Salad
- 1/2 cup mayonnaise
- 1 tablespoon sour cream
- 1 tablespoon honey
- 1 tablespoon cider vinegar
- 1 teaspoon brown sugar
- 1 cup red cabbage thinly sliced
- 1 Granny Smith apple, peeled, cored, and grated then tossed with lemon juice
- 1 tablespoon chopped mint
- salt and pepper

Preheat the panini grill. Lay the bread on a clean surface and spread mustard on one slice. Top with the ham, spinach, apple salad, and two slices of Swiss cheese. Spread mustard on second slice of bread and top sandwich. Sprinkle olive oil on each side of the bread and place in grill for about 7 minutes.

For the shaved apple salad, combine mayonnaise, sour cream, honey, cider vinegar, and brown sugar in a medium bowl. Stir and add cabbage, onion, mint and toss until incorporated. Season with salt and pepper.
