Endive Appetizers
Endive stuffed with any of the following
ingredients
- hummus
- pureed canned white beans (add lemon)
- goat cheese and parsley
- artichoke spread
- black olive tapenade

Clean endive and separate so that you have individual leaves that make a boat or scoop

Stuff the leaves with any one of the above or a mixture of them all
- 3
Arrange in a circle on a platter and surround with small grape tomatoes and parsley

A great appetizer when guests show up unexpectedly. Very easy
