Pumpkin roll

ingredients

  • Cake:
  • 3 eggs
  • 1 c. sugar
  • 2/3 c. pumpkin
  • 1 t. ginger
  • 1/2 t. salt
  • 1 c. chopped walnuts
  • 1 t. lemon juice
  • 1/2 t. nutmeg
  • 3/4 c. flour
  • 1 t. baking powder
  • 2 t. cinnamon
  • Filling:
  • 1 c. sugar
  • 8 oz cream cheese
  • 2 T. butter
  • 2 t. cinnamon

    Preheat oven to 375F.

    Beat eggs on high speed for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Stir in flour, baking powder, cinnamon, ginger, nutmeg and salt. Add to pumpkin mixture on top of wax paper in pan. Top with walnuts and bake for 15 minutes. Turn baked cake out onto a towl and peel off wax paper. Roll cake and towel loosely together. Allow to cool at least one hour. Cream together all filling ingredients. Unroll cake and spread with filling mixture. Reroll without towel.
