Onion Soup au Gratin

ingredients

  • 1 large vidalia onion
  • 3 T. butter
  • 1/3 c. cognac
  • 1/4 c. beer
  • 3 T. honey
  • 1 t. thyme
  • 4 1/2 c. Brown chicken stock
  • Pumpernickel bread
  • provolone or gruyere cheese

directions

Sautee your onions witht the butter until they are caramelized (about 15 minutes). Add the cognac and beer and reduce. After reduced, add thyme and honey. Slowly add chicken stock. Bring to a boil. Reduce heat and simmer for 10 - 15 minutes, add salt and pepper to taste. Take off heat, put in bowls and broil with bread and cheese on top.
