Virginia Clark's Yellow Squash Casserole

ingredients

  • 3 lbs yellow squash, sliced, cooked, drained
  • 1 can cream of chicken soup
  • 1/2 cup Smart Balance
  • 2 cups granted carrots
  • 3/4 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 cup chopped green peppers
  • 1/2 pkg Pepperidge Farm stuffing mix
  • 1 cup grated cheddar cheese
  • salt and pepper

directions

Preheat oven to 325°. In large bowl combine all ingredients. Pour into greased casserole dish. Bake until bubbly and brown on top. Last 10 minutes add cheese.
