Virginia Clark's Yellow Squash Casserole
ingredients
- 3 lbs yellow squash, sliced, cooked, drained
- 1 can cream of chicken soup
- 1/2 cup Smart Balance
- 2 cups granted carrots
- 3/4 cup chopped celery
- 1/2 cup chopped onion
- 1/2 cup chopped green peppers
- 1/2 pkg Pepperidge Farm stuffing mix
- 1 cup grated cheddar cheese
- salt and pepper
directions
Preheat oven to 325°. In large bowl combine all ingredients. Pour into greased casserole dish. Bake until bubbly and brown on top. Last 10 minutes add cheese.
