Cream Cheese Mashed Potatoes

  • 6 yukon gold potatoes
  • 3 garlic gloves
  • water
  • 1/2 stick of butter
  • 4 oz cream cheese
  • 1/2 cup milk
  • Fresh chives
  • salt

    Peel and quarter potatoes. Put in a big pot. Smash garlic with flat end of kitchen knife to remove the skin. Drop garlic into the pot whole. Cover with cold water. Put pot on high heat, and when water begins to boil, drop the heat down to medium. In another, smaller saucepan, combine 4 ounce cream cheese, 1/2 stick of butter, and 1/2 cup milk. Melt and mix.

    Scoop 1/2 cup of starchy cooking water and set to the side. Drain potatoes and put back in pot. Pour some cream cheese mixture and a little cooking liquid into potatoes and mash. Keep adding cream cheese mixture and mash until potatoes reach the consistency desired. Snip fresh chives with scissors and mix into potatoes. Season with salt to taste.
