Well, one night, I was scrounging in the cupboard for something to make for dinner, and made something like this. I didn’t write it down, and the kids are mad about that. I guess I just didn’t realize it was gonna be so good. Anyway, here is my best recollection. (Corey came up with the name)

ingredients

  • 1 pound ground beef, crumbled and browned
  • 2 cloves garlic
  • 1 cup carrots peeled and diced very small
  • 1 onion diced small
  • 1 teaspoon dried basil
  • 1 teaspoon dried Italian seasoning (or rosemary)
  • 1 can diced tomatoes (Italian style)
  • 3 tablespoons olive oil
  • 2 cups cooked thin spaghetti noodles
  • 1/2 cup Parmesan cheese

directions

    Heat 1 tablespoon olive oil in large saute pan, add garlic carrots and onion. Saute until onion is soft (carrots will still be somewhat crisp) Add in spices, cooked ground beef and canned tomatoes juice and all. Stir and cook over low to medium heat. Add in cooked noodles and remainder of the olive oil, and half of the Parmesan cheese.

    Serve sprinkled with Parmesan cheese on top

when I made this the first time, the only noodles I could find were in a box of hamburger helper. I wonder if that's what made it so good? Oh well.
