Zucchini Casserole
ingredients
- 4 large eggs
- 3-4 zucchinis
- 3 large carrots
- 1 large baking potato
- 1 large onion
- 3/4 cup dry bread crumbs or matzah meal
- 1 garlic clove
- 1/4 lb. (1 stick) butter/margarine, melted
- salt and pepper to taste

Preheat oven to 350 F.

Beat eggs in a large bowl.

In a food processor, grate zucchinis, carrots, potato, and onion. Work in smaller batches, if necessary. Add to eggs and then add the other ingredients.

Add salt and pepper to taste.

Pour into a 7x11 inch (9x13) baking dish and bake for 1 hour, or until brown.

Note: All ingredients can be grated or chopped by hand if no food processor is available.
