Olive Tapenade
This savory mixture is best served year round with a glass of your favorite wine!
ingredients
- 1 medium jar roasted red peppers
- 1 medium jar green spanish olives with pimentos
- 1 medium jar kalamata olives pitted
- extra virgin olive oil
- cream cheese (you can use reduced fat or fat free and not compromise the ultimate flavor)
- garlic - about 2 cloves diced
- dried herbs - oregano, basil, parsley
- melba toast rounds or crostini rounds made from fresh bread
directions
In your food processor pulse olives and peppers. Add evoo as needed. I like this recipe chunky so you can appreciate all the colors and flavors. When the mixture is the consistency you like, pour into a bowl and refrigerate until ready to serve. In a separate bowl mix cream cheese, garlic and herbs to taste. Spread this mixture on the rounds and top with olive mixture. Enjoy!
