Black Beans and Brown Rice
Black beans and vegetables simmered with a touch of garlic and red pepper, then served over brown rice. Can be served as is or with extra veggie toppers.
ingredients
- 1/2 cup each:
- onion
- green pepper
- carrots
- celery
- Olive Oil
- Garlic, minced
- Crushed Red Pepper
- 3 Cans Black Beans
- Brown Rice
- Toppers:
- Lettuce
- Tomato
- Grated Low Fat Cheddar Cheese
- Salsa
directions

1. Sauté onion, green pepper, carrots, and celery in a small amount of olive oil.

2. Add a touch of minced garlic and crushed red pepper.

3. Add beans and their liquid and simmer for 1 hour.

4. Serve over brown rice and top with toppers.

A favorite for a main meal or a leftover side dish. Also great for covered dish share-a-meals.
