Sausage and mushroom pizza
2 Pizza dough
Pizza tomato sauce
4 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, chopped
1 sweet fresh Italian sausage, removed from casing
salt and freshly ground pepper to taste
½ pound mushrooms, thinly sliced
flour for coating
3 oz mozzarella cheese
Grated Parmesan cheese for sprinkling
4-6 basil leaves, torn into pieces
Place a pizza stone in the oven. Preheat the oven to 550 for at least 30 minutes
Meanwhile in a large skillet, heat the olive oil over medium high heat and saute the onion and garlic for 3 minutes, or until soft. Add the sausage and stir until lightly browned. Drain off the fat, season with salt and pepper, and set aside.
Add 2 tbsp olive oil and saute the mushrooms until they release their moisture and are browned; set aside.
Lay an unbaked, shaped pizza round on the the lightly floured pizza stone. Add a ladle of tomato sauce to the center. Use the bottom of the ladle to swirl out a spiral of sauce to cover the surface, Leaving about a 1 inch border. Top with half of the mozzarella. Distribute half the sausage mixture and mushrooms evenly over the mozzarella. Sprinkle with Parmesan and half the basil.
Bake for 4 to 6 minutes, or until the crust is puffy and browned. Remove from the oven, cut into wedges, and serve at once. Repeat to make 2 pizzas.
