Twice Baked Potato Bake
I made this up one day, and served it with the oven BBQ ribs. Corey Loves this stuff!
ingredients
- 3/4 pounds Yukon Gold Potatoes, boiled with peels intact
- 1 small loaf Velveeta cheese
- 1 tub sour cream
- 1 cube butter
- 1 bunch green onions chopped
- 1/2 cup milk
- 1/2 cup shredded cheese
- 1 clove garlic diced
- salt and pepper to taste
directions
boil potatoes until soft (like your making mashed potatoes) Drain water, and add butter, sour-cream and milk to pan. Mash by hand, leaving the potatoes slightly lumpy. Add in Velveeta cheese (cut up into cubes) garlic, green onions and salt and pepper. Spread potato mixture into a casserole dish (sprayed with cooking spray) and top with grated cheese. Cover with tinfoil and bake in oven for 30 minutes at 350. Remove foil and bake for 10 more minutes, or until the top begins to bubble and brown.
