ingredients

  • 1 medium onion, chopped
  • 2 Tablespoons butter
  • 2 Tablespoons olive oil
  • 1 clove garlic, minced
  • oregano
  • red pepper flakes
  • 1 lb shrimp, cleaned and de-veined
  • 1 jigger ouzo (vodka will do for non-Greeks!)
  • 1 tomato, chopped
  • feta cheese
  • parsley, chopped

    Preheat oven to 400 degrees.

    Saute onion over medium heat in oil and butter together. Add garlic, dash of oregano and red pepper flakes. Cook until soft.

    Add shrimp and cook until just pink. Remove shrimp to oven-proof baking dish. Deglaze pan with ouzo, reduce a bit and pour over shrimp.

    Place chopped tomatoes, crumbled feta cheese, and chopped parsley over shrimp. Bake until cheese melts and dish is hot throughout.

    Serve with buttered orzo or rice.
