Pasta Salad
From Beth, her Dad, and the Wegmans Deli
ingredients
- 16 oz pasta (shells or penne)
- 1/2 bunch asparagus or 1/2 lb green beans, cut in 1-inch pieces
- 1/2 Vidalia onion chopped in 1/2 inch pcs.
- 1 yellow pepper, cut in 1/2 inch pcs.
- 1 cup tomatoes, seeded and chopped (plum tomatoes are best)
- 4 oz Feta cheese, crumpled in small pcs
- 1/4-1/2 cup Caesar salad dressing or Parmesan Italian dressing (my favorite is Ken’s Steak House brand Creamy Parmesan with Cracked Peppercorn)

Cook pasta according to directions, and add asparagus to boiling pasta 3-4 minutes before pasta is cooked. Drain pasta and asparagus, rinse in cool water and pat dry. Prepare all vegetables and mix in large bowl with pasta, feta cheese and dressing. Chill well before serving.

Also one can add cooked or grilled chicken or cooked shrimp.
