Pumpkin Custard Pie
ingredients
- 3 Eggs, beaten
- 1/3 Cup Brown Sugar
- 1/2 Cup Sugar
- 1 t Salt
- 1/2 t Nutmeg
- 1 t Cinnamon
- 1/4 t Ginger
- 1 Cup Half and Half
- 2 Cups Pumpkin, preferably fresh
- 1 9" Pie shell (Optional), unbaked
- Whipped Cream or Ice Cream for serving (Optional)

If using fresh Pumpkin, cut in half or quarters and pre-cook in microwave until soft. Remove skin and put pulp through food processor until smooth.

Preheat oven to 400°.

Add all other ingredients to the beaten eggs and mix well. Pour into the pie shell or into buttered pie plate.

Bake 35-40 minutes or until knife inserted near the edge comes out clean.
