This is a simple and delicious treatment for fresh fish fillets. They are covered with crisp herb-flavored crumbs and drizzled with butter.

ingredients

  • 1 1/2 Pounds fresh fish fillets, such as salmon, trout, bass,catfish, or whitefish
  • 1/2 Cup milk
  • 1/2 Cup all-purpose flour
  • 1 Tsp each salt, dried basil and chervil leaves
  • 1 Egg, beaten
  • 1/2 Cup fine dry bread crumbs
  • 1/3 Cup melted butter or margarine
  • Parsley and lemon wedges for garnish
