Turkey Bacon Biscuits
One biscuit meal
ingredients
- 5 turkey bacon slices, cooked and crumbled
- 1 (8 oz) pkg light cream cheese, softened
- 2 eggs
- 2 tbsp 2% milk
- 1/4 c shredded cheddar cheese
- 1/4 c shredded pepper jack cheese
- 1 tbsp green onion, chopped
- 1 (10 oz) can refrigerated flaky biscuits
directions
Heat oven to 375 F. Grease 10 muffin cups. Cook bacon according to package directions. In small bowl, beat cream cheese, eggs, and milk on low speed until smooth. Divide in half. Stir in cheddar cheese into one half of the egg mixture. Stir in pepper jack and green onion into the other half of the egg mixture. Separate dough into 10 biscuits. Place 1 biscuit in each greased muffin cup; firmly press in bottom and up sides, forming a 1/4 " rim. Place half of bacon in bottom of dough-lined muffin cups. Spoon cheese mixture over bacon. Bake 20-25 minutes or until filling is set and biscuits are golden brown. Sprinkle each cup with remaining bacon; lightly press into filling. Remove from pan.

Dennis spotted this recipe on the back of a Jennie-O Turkey Bacon package. We decided to save the recipe and modify it to our family's tastes. We changed the cheese from Swiss and reduced the onions by half.
