Grandma Grace's Turkey Stuffing

ingredients

  • 1 lb. rice, cooked & cooled
  • 5 lbs. beef chop meat (can use turkey)
  • 8 hard-boiled eggs, chopped into bite-sized pieces
  • 8 raw eggs, lightly beaten
  • 3 onions, chopped & fried
  • 8 raw onions, diced
  • 3/4 lb. salami, diced
  • 3/4 lb. provolone, diced
  • 1 head celery, washed & sliced
  • Fresh parsley, to taste
  • garlic powder, to taste
  • 1 1/2 cups breadcrumbs
  • 1 cup grated cheese
  • black pepper, to taste
  • pignoli (pine) nuts, to taste

    Combine all ingredients in a large bowl.

    Transfer to a large roasting pan and spread mixture out.

    Bake in 350 degree oven until chop meat is cooked and brown on top, at least 1 hour.

notes

Traditional for Thanksgiving. Leftover stuffing can be frozen and then re-heated. Chicken broth can be added if stuffing seems dry.
