Grandma Grace's Turkey Stuffing
ingredients
- 1 lb. rice, cooked & cooled
- 5 lbs. beef chop meat (can use turkey)
- 8 hard-boiled eggs, chopped into bite-sized pieces
- 8 raw eggs, lightly beaten
- 3 onions, chopped & fried
- 8 raw onions, diced
- 3/4 lb. salami, diced
- 3/4 lb. provolone, diced
- 1 head celery, washed & sliced
- Fresh parsley, to taste
- garlic powder, to taste
- 1 1/2 cups breadcrumbs
- 1 cup grated cheese
- black pepper, to taste
- pignoli (pine) nuts, to taste

Combine all ingredients in a large bowl.

Transfer to a large roasting pan and spread mixture out.

Bake in 350 degree oven until chop meat is cooked and brown on top, at least 1 hour.
notes
Traditional for Thanksgiving. Leftover stuffing can be frozen and then re-heated. Chicken broth can be added if stuffing seems dry.
