Spinach Souffle

ingredients

  • 1 package frozen, chopped spinach
  • 1/2 tsp. dried onion flakes
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1 cup milk
  • salt and pepper to taste
  • 1/4 cup grated cheddar cheese
  • 3 eggs
  • 1/4 cup dry bread crumbs
  • Grated parmesan cheese

    Microwave spinach; following directions on package. Drain liquid and add onion flakes. Set aside to cool.

    Make medium white sauce with butter, flour, milk, salt and pepper. In saucepan, melt butter and stir in flour until well blended and bubbly. Remove from heat. Gradually stir in milk. Cook, stirring constantly until mixture is thickened and smooth. Add cheese to white sauce. Stir. Beat eggs. Prepare well-greased baking dish. Combine cooled spinach, white sauce, and beaten eggs and 1/4 cup dry bread crumbs. Blend carefully. Do not beat. Pour into greased baking dish. Sprinkle with grated parmesan cheese. Bake at 350 degrees for 35 minutes or until lightly browned on top.
