Mom's Sweet Potato Casserole
This recipe was passed down by Grandma Olavarri and has been a family favorite for years.
ingredients
- 3 C Mashed Sweet Potatoes (1 Large Can of Candied Yams is the family version)
- 1/4 C Light Brown Sugar
- 1/2 tsp Salt
- 1/2 tsp Lemon Juice
- 1 tsp Cinnamon
- 1 tsp Ginger, ground
- 1 T Butter, melted
- 1 (9oz) Can Crushed Pineapple or Pineapple Juice with Juice
- 1/2 C miniatgure Marshmallows (optional)
- 1 Egg (optional)
- 12 Large Marshmallows

1. Preheat oven to 350°.

2. Mash sweet potatoes with the next 7 ingredients (add egg if using).

3. Stir in Mini Marshmallows.

4. Turn into casserole dish sprayed with cooking spray. Bake 20-30 min depending on how deep the casserole dish is. (Dish can be prepared up to this point ahead of time)

5. Top with large Marhmallows and bake until browned, watch carefully

Add 1/4 Chopped Nuts if desired. Substitute 1/4 C Orange Juice and Zest of 1 Orange for Pineapple
