Brown Sugar Pecan Sweet Potato Casserole
I got this recipe from family friends, the Valikai’s, and it is one of my favorite sweet ways to enjoy sweet potatoes for the holidays.
ingredients
- 6 Sweet Potatoes, cooked, peeled and mashed
- 1/4 C Fat Free Evaporated Milk
- 1/4 C Orange Juice
- 1 tsp Vanilla Estract
- 1/2 C Granulated Sugar
- 1/2 tsp Salt
- 3 T Butter, melted
- 1/2 tsp Nutmeg, ground
- 1/2 tsp Cinnamon, ground
- Topping:
- 1/3 C Butter, melted (or less as desired)
- 3/4 C Packed Brown Sugar
- 1/2 C AP Flour
- 3/4 C Chopped Pecans

1. Preheat oven to 350°. Spray 2 quart Casserole dish with cooking spray and set aside

2. Blend together the Sweet Potatoes, Evaporated Milk, Orange Juice, Vanilla, Sugar, Salt and Butter.

For a really smooth puree, blend in a food processor.

3. Mix together topping and sprinkle over casserole

4. Bake for 45 min or until hot.
notes
For a spiked version, try substituting Bourbon, Rum or Brandy for the Orange Juice.
