Apple Cake

ingredients
- 1 1/2 c. salad oil
- 2 c. sugar
- 2 eggs
- 3 c. flour
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2 tsp. vanilla
- 3 c. unpeeled, cored, chopped Winesap apples
- 1 c. chopped pecans
directions
Heat oven to 350. Grease and flour a large tube pan, or 9 x 15: sheet pan. Combine oil and sugar; mix well. Add eggs, one at a time, beating well after each addition. Sift flour, soda, cinnamon and salt together and add to egg mixture. Add vanilla; mix well. Fold in apples and pecans. Bake in preheated oven for 60-70 minutes if baking in tube pan, or 45 minutes if baking in sheet pan.
