Coq au Vin
ingredients
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 lb. butter
- 1/4 lb. mushrooms
- 1/2 sliced onion
- 1 Tbsp flour
- 2 Tbsp chopped onion
- 3/4 cup burgundy
- 1 chicken, chopped

Brown chicken; reduce flame and add flour and 2 Tbsp chopped onion.

Then add burgundy, mushrooms and onion.

Cook for one hour while covered.

Turn chicken after 1/2 hour and cook uncovered for the last 1/2 hour.

Another variation is to brown the onions first and use whole small mushrooms.
