ingredients

  • 1/2 C vegetable shortening
  • 1 C sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 C sifted flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 C unsweetened cocoa
  • 1/2 C milk
  • 1/4 C sour cream
  • 1/2 C hot water
  • 1 tsp baking soda

directions

Cream shortening and sugar together. Add egg and vanilla and beat well.

Sift together flour, salt, baking powder and add to batter with milk and sour cream.

Stir baking soda into hot water and add to batter, continuing to beat until thoroughly mixed and batter is smooth.

Drop approximately a tablespoon of batter onto baker’s paper on a flat sheet pan, spacing them about 2-1/2 inches apart. Bake 6 to 8 minutes and cool on a rack. Remove when cool and put 2 cookies together, with the flat sides facing each other and the Moon Pie Filling in between.

Keep pies separated by wrapping them.
