Peach Crepes

ingredients
- Crepes:
- 1 1/2 cups flour
- 1 Tbsp. sugar
- 1/2 tsp. baking powder
- 1/2 tsp salt
- 2 cups milk
- 2 eggs
- 2 Tbsp margarine melted
- 1/2 tsp vanilla
- Peach Sauce
- 1/2 cup sugar
- 1 Tbsp cornstarch
- 1/4 tsp cinnamon
- 4 cups sliced peaches
- 1 tsp lemon juice

Crepes:

Mix flour, sugar, baking powder, and slat. Stir in remaining ingredients. Bead with whisk until smooth. Lightly spray 6-8 inch skillet, heat over medium heat. Pour in scant 1/4 cup batter into skillet and immediately rotate pan until a fine film covers bottom.

Cook until lightly browned. turn and cook other side. Stack crepes placing waxed paper between each. Keep covered.

Peach Sauce;

Mix sugar, cornstarch, and cinnamon in saucepan. Stir in peaches and lemon juice. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.

Mash the peaches with potato masher- you want chunky.

Dust with powdered sugar for great presentation
