Spinach with Chickpeas
ingredients
- 1/2 cup pine nuts
- 3 tbsp olive oil
- 2 cloves garlic, thinly sliced
- 1 15.5 oz can chickpeas, rinsed
- 1/2 cup raisins
- 1 pkg fresh spinach (or 2 bunches swiss chard, stems trimmed)
- 3/4 tsp salt
- 1/2 tsp black pepper

Over low heat, toast pine nuts in large skillet, shaking pan frequently until golden, 3-4 minutes. Transfer to plate.

Return skillet to medium heat, add oil and heat for 1 minute. Add garlic and cook for 1 minute. Add chick peas, raisins, spinach, salt & pepper.

Cook, stirring occasionally, until spinach is tender, about 5 minutes. Remove from heat, divide among plates, and top with pine nuts
