Applesauce Cake



  • 1 1/2 cups golden raisins
  • 3/4 cup vegetable shortening
  • 2 cups sugar
  • 3 eggs
  • 2 1/2 cups flour
  • 3 tbsp cocoa
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 2 cups applesauce
  • 1 cup walnuts

    Cover raisins with boiling water, and let them soak for 30 minutes, then drain. Cream vegetable shortening and gradually add the sugar and cream mixture until it is very smooth, add eggs, one at a time, beating hard after each addition. In another bowl mix flour, cocoa, nutmeg, salt, cinnamon, and baking soda. Stir the dry ingredients into the creamed mixture and slowly add applesauce. Add raisins and walnuts.

    Pour the batter into an oiled 10-inch “tube pan” and bake the cake in a moderate oven (350) for one hour, or until it is done. Cool the cake on a wire rack for about 10 minutes and remove it from the pan.
