Black Bean and Corn Salad
Make often for camps
ingredients
- 2 cups rinsed and drained black beans
- 2 cups corn (I use fresh or frozen)
- 1/3 cup chopped red onion
- 1/4 cup fresh cilantro
- 3 Tbsp lime juice
- 1 tsp salt
- 1/2 tsp cumin
- 1/8 tsp pepper
- 2 tsp. sugar
- 2 tsp chili pepper

Mix dressing separately and pour over the beans, corn, onion and cilantro.

Refrigerate- the longer this sits the better the flavors.
