My version of “jalapeno’ poppers”

ingredients

  • 2 lbs. spicy italian pork sausage
  • 2 cups soft goats cheese
  • 6 to 8 jumbo jalapenos
  • 1 cup spiced bread crumb mix
  • 1/2 tsp tarragon
spiced bread crumb mix
  • 2/3 cup panko bread crumbs
  • 1/3 cup cornmeal
  • 1/2 tsp crushed chillies
  • 1/2 tsp garlic powder

    1. Make slit in top of peppers to remove seeds

    2. then stuff with cheese so you can close pepper to original shape.

    3. Encase peppers with sausage so they are completely surrounded (if not you’ll lose cheese when baking).

    4. Roll sausage peppers in crumb mixture until completely coated, ends too.

    4. place peppers on a broiling pan

    5. bake at 325°F for 45 min turning peppers over half way through. Watch baking close during last ten minutes so cheese doesn’t bake out

    5. allow to rest for 2 min before serving
