Vegetable Bean Chili/soup
Megan found this and made without beef- a great evening meal with corn muffins. Most of these items come from my garden.
ingredients
- 3/4 lb ground beef (optional)
- 2 cups wate
- 2 cups whole kernel corn (or Mom’s frozen corn)
- 1 cup bottled salsa (I use Glen’s canned salsa)
- 2 Tbsp. chili powder
- 1 tbsp. sugar
- 2 1/2 tsp cumin
- 1 1/2 tsp. dried oregano
- 1/4 tsp salt
- 1 16 oz. can of chili beans o red kidney beans undrained
- 1 14 oz can of diced tomatoes (again I use home canned tomatoes)
directions
Cook beef in Dutch oven, stir in water, and all other ingredients. Bring to boil and reduce heat to simmer for 20 minutes.
