Crunchy Mandarin Orange Salad

Ingredients

Dressing
  • 1/2 teaspoon salt
  • dash pepper
  • 2 tablespoons sugar
  • 2 tablespoons vinegar
  • 1/4 cup oil
  • 1 tablespoon parsley
  • dash hot pepper
Salad
  • 1/2 cup sliced almonds
  • 2 tablespoons + 1 teaspoon sugar
  • 1/2 head lettuce
  • 1 cup celery, chopped
  • 2-3 green onions, chopped
  • 1 11-oz. can mandarin oranges, drained

Combine dressing ingredients and set aside. Heat almonds and sugar in saucepan until almonds begin to brown; lay aside to cool, then break apart. Combine lettuce, celery, and onions. Add oranges, almonds, and dressing just before serving.
