Southwest Chicken Corn Chowder

ingredients
- 1 lb. boneless -- skinless chicken breast, cut into 1-inch pieces
- 1 tbsp lime juice
- 1 tsp salt
- 1 C diced yellow onion
- 1 C chopped green onion
- 2 tbsp pure olive oil or butter
- 2 cloves garlic -- minced
- 1 C diced celery
- 1 C diced red bell pepper
- 1 or 2 jalapeƱos -- seeded and chopped fine
- 1 16-ounce bag frozen corn kernels
- 1 can 4-ounce green chilies -- diced
- 1 quart chicken broth -- preferably natural
- 1 C cream
- 1/2 tsp ground black pepper
- 1 C grated potato -- preferably Yukon Gold, grated just before using
- 1 tsp cornstarch
- 1/4 C chopped fresh cilantro
