ingredients

  • 1 lb. boneless -- skinless chicken breast, cut into 1-inch pieces
  • 1 tbsp lime juice
  • 1 tsp salt
  • 1 C diced yellow onion
  • 1 C chopped green onion
  • 2 tbsp pure olive oil or butter
  • 2 cloves garlic -- minced
  • 1 C diced celery
  • 1 C diced red bell pepper
  • 1 or 2 jalapeƱos -- seeded and chopped fine
  • 1 16-ounce bag frozen corn kernels
  • 1 can 4-ounce green chilies -- diced
  • 1 quart chicken broth -- preferably natural
  • 1 C cream
  • 1/2 tsp ground black pepper
  • 1 C grated potato -- preferably Yukon Gold, grated just before using
  • 1 tsp cornstarch
  • 1/4 C chopped fresh cilantro
