Skillet white beans

ingredients

  • 1/2 large sweet onion, thinly sliced
  • 1.5 Tbsp butter
  • 1/3 c maple syrup
  • 1/4 c white balsamic vinegar or lemon juice
  • 1 Tbsp packed brown sugar
  • 1 Tbsp snipped fresh sage
  • 1 Tbsp tomato paste
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 16 oz cans navy beans, rinsed and drained
  • 1 16 oz cans butter beans, rinsed and drained
  • 1 can chickpeas, rinsed and drained

directions

Cook onion in butter for 15 minutes or until tender and browned. Stir in maple syrup, balsamic vinegar, brown sugar, sage, tomato paste, salt and pepper. Add beans, stir to coat. Cover and cook for 10-15 minutes or until heated through.
