Oriental Orange Glazed Seared Salmon
ingredients
- 4 8 oz. Salmon Fillets, skinned & boned
- Marinade:
- 2 c. soy sauce
- 2 t. ginger
- 2 T. orange marmalade
- 2 T. sesame oil
- 1/2 t. red pepper flakes
- Glaze:
- 2 T. chopped shallots
- 1 t. chopped garlic
- 2 T. olive oil
- 1 cup orange marmalade
- 1/2 cup white wine (chicken broth would work)
- 1/4 t. cinnamon
- 1/4 t. ginger

Combine marinade ingredients in bowl and set aside. Let set 10 minutes. Add the salmon and marinade 5 minutes.

In saucepan saute shallots, add garlic and saute 5 minutes. Add orange marmalade, broth, ginger & cinnamon. Cook sauce down to glaze consistency.

In a hot skillet, sear the salmon. Place in an oiled baking pan and bake fish, uncovered, for 6 minutes at 400 deg.

Serve salmon drizzled with sauce.
