Mexican Chicken Lasagna

ingredients
- 2 T vegetable oil
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 green pepper (seeded & chopped)
- 2 (10 3/4 oz.) cans condensed tomato soup
- 1 (10 oz.) can enchilada sauce
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 T chili powder
- 1 tsp. ground cumin
- 1 (10 oz.)pkg. lasagna noodles (cooked according to directions)
- 2 cups (1 pint) cottage cheese
- 2 eggs (beaten)
- 1/3 cup parsley (chopped)
- 2-4 T diced green chilies
- 4 cups chicken, cooked, torn into large pieces
- 6 oz. cheddar cheese
- 6 oz. jack cheese
