ingredients

  • 2 T vegetable oil
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 green pepper (seeded & chopped)
  • 2 (10 3/4 oz.) cans condensed tomato soup
  • 1 (10 oz.) can enchilada sauce
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 T chili powder
  • 1 tsp. ground cumin
  • 1 (10 oz.)pkg. lasagna noodles (cooked according to directions)
  • 2 cups (1 pint) cottage cheese
  • 2 eggs (beaten)
  • 1/3 cup parsley (chopped)
  • 2-4 T diced green chilies
  • 4 cups chicken, cooked, torn into large pieces
  • 6 oz. cheddar cheese
  • 6 oz. jack cheese
