Carrot Pineapple Muffins
ingredients
- 1 c. whole wheat flour
- 1/2 c. all-purpose flour
- 1/2 c. brown sugar
- 1 t. baking powder
- 1 t. baking soda
- 1/2 t. nutmeg
- 1 t. cinnamon
- 1/4 t. salt
- 2 T. oil
- 1 egg
- 1/4 c. skim milk
- 1 c. grated carrot
- 1 (8 oz) can crushed pineapple, undrained

Preheat oven to 350 degrees.

Mix together flours, sugar, baking powder, baking soda, and seasonings.

In a separate bowl, mix oil, egg, milk, carrots, and pineapple with juice. Pour into flour mixture.

Mix until ingredients are just moistened. Spoon into muffin pans that have been sprayed with cooking spray.

Bake for 20 mins.
