My stepfather’s recipe. We always love when Pop Pop makes his tempora!

ingredients

  • Chilean Sea Bass or other white fish
  • Shrimp
  • Assorted Vegetables: onion rings, eggplant, zucchini, sweet potatoes, broccoli, green beans, etc.
  • 2 cups water
  • 2 eggs
  • 2 1/2 cups flour + more for dredging
  • 4 part cooking oil
  • Dipping Sauce:
  • 1 cup clam juice
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup grated fresh ginger
  • 1 part sesame oil

    Put 2 cups water in a large bowl. Add 2 eggs. Whisk together as you add flour -- about 2 1/2 cups, maybe more, like pancake batter but a little lighter.

    Heat oil on high until bubbles form.

    Dip seafood or vegetables in flour then batter. Drop in oil. Turn down heat so seafood/vegetables bubble gently. Cook until starts to brown: fish about 5 minutes, shrimp and vegetables about 3 minutes.

    Mix dipping sauce ingredients together and serve with tempora.
