Jimmy's Tempora
My stepfather’s recipe. We always love when Pop Pop makes his tempora!
ingredients
- Chilean Sea Bass or other white fish
- Shrimp
- Assorted Vegetables: onion rings, eggplant, zucchini, sweet potatoes, broccoli, green beans, etc.
- 2 cups water
- 2 eggs
- 2 1/2 cups flour + more for dredging
- 4 part cooking oil
- Dipping Sauce:
- 1 cup clam juice
- 1/4 cup soy sauce
- 1/4 cup mirin
- 1/4 cup grated fresh ginger
- 1 part sesame oil

Put 2 cups water in a large bowl. Add 2 eggs. Whisk together as you add flour -- about 2 1/2 cups, maybe more, like pancake batter but a little lighter.

Heat oil on high until bubbles form.

Dip seafood or vegetables in flour then batter. Drop in oil. Turn down heat so seafood/vegetables bubble gently. Cook until starts to brown: fish about 5 minutes, shrimp and vegetables about 3 minutes.

Mix dipping sauce ingredients together and serve with tempora.
