Red, White & Bean Minestrone
ingredients
- 1 tbsp extra virgin olive oil
- 1 cup Italian turkey sausage, chopped
- 2 tbsp tomato paste
- 1 cup chopped onion
- 1 cup chopped celery
- 2 tbsp minced garlic
- 1 cup chopped carrots
- 1 tsp dried oregano
- 1 can chopped tomatoes
- 5 cups chicken stock
- 1 can cannellini beans
- 1 can red kidney beans, drained
- 2 cups zucchini, cut into 1/2 inch pieces
- 2 cups baby spinach
- 1 cup booked bowtie pasta
- 2 tbsp pesto (optional)
- 2 tbsp fresh grated parmesan cheese

1. Heat oil over medium heat in saute pan

2. Add sausage, brown well

3. Add tomato paste, cook 5 minutes until brown

4. Add onions, celery, garlic, carrots & oregano; cook~ 5 minutes

5. Pour into slow cooker or large pot

6. Cook on low sietting for 6-7 hours or until vegetables are tender

7. Stir in beans, zucchini, spinach & cooked pasta. Cook on high setting for 8 minutes

8. Pour the soup into bowls

8. Top with pesto & fresh parmesan
