Smothered Pork Chops
ingredients
- 1 c. flour
- 2 T. onion powder
- 2 T. garlic powder or garlic salt
- 1 tsp. cayenne
- 1/2 tsp. ground black pepper
- 4 pork chops, 3/4 in. thick, bone-in
- 1/4 c. olive oil
- 1 c. chicken broth
- 1/2 c. buttermilk

Put the flour in a shallow platter. Add onion powder, garlic powder, cayenne, salt, and pepper; mix with fork to distribute evenly. Pat chops dry with paper towels to remove any moisture and then dredge in seasoned flour, shaking off excess.

Heat a large sauté pan or cast iron skillet over medium heat and coat with oil. When oil is hot, lay chops in the pan in a single layer and fry for three minutes on each side. Remove chops from pan and add a little sprinkle of seasoned flour to pan drippings. Mix flour into the fat to dissolve and pour in chicken broth. Let liquid cook down for five minutes to reduce and thicken. Stir in buttermilk to make creamy gravy. Return chops to pan, covering them with the sauce. Simmer for 5-8 minutes until pork is cooked through.
