Peanut Brittle
ingredients
- 2 cups sugar
- 1 cup lite white corn syrup
- 2 cups raw Spanish peanuts
- 1 tsp. salt
- 1 Tbsp. butter
- 1 cup water
- 1/2 tsp. baking soda
directions
Cook sugar, corn syrup, and water to softball stage (°236). Add peanuts, 1/2 tsp. salt and cook to hard crack (305°). Stir in butter and soda into mixture. Pour onto a wax papered large cookie sheet and spread thin. Chill. Break into pieces.
