A family favorite!!
- 3-4 lbs chicken breast, boiled until tender and diced
- 1/2 doz corn tortillas
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 C chopped green pepper
- 1 C chopped onion
- 1 T chili powder
- 3/4 lb grated cheddar cheese
Line bottom and sides of a greased 3 qt casserole with tortillas.
Sprinkle with 2T reserved chicken stock and make layer with mushroom soup and 1/2 of chicken; 1/2 other ingredients.
Cover with tortillas, 2T stock, chicken soup, 1/2 remaining ingredients.
Top with 10 oz can tomatoes with chiles.
May be prepared in advance and refrigerated. Bake at 350o for 1 hour (covered first 45 minutes).
Expand by using more tortillas. make spicier with more chili powder.
