Twice Baked Potato Casserole
To create a great looking garnish,cut 2 in wide strips of wax paper & arrange on top of casserole. Sprinkle uncovered areas with cheese. Remove paper & sprinkle chives and bacon. I usually leave an outside edge for chives and alternate cheese & bacon in angled lines.
ingredients
- 8 medium baking potatoes (4 lbs) BAKED
- 2 cups shredded Cheddar cheese, divided
- 1 16 oz container sour cream
- 1 8 oz package cream cheese, softened
- 1/2 cup milk
- 1/2 cup butter, melted
- 2 garlic cloves, minced
- 1 tbsp fresh chopped chives
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 6 slices of bacon,cooked crisp and crumbled
- 1/4 cup chopped fresh chives
- Garnish: Chive Bundles

Peel potatoes & coarsely mash pulp wit a potato masher. Stir in 1 cup cheddar cheese, sour cream and next 7 ingredients. Spoon into a lightly greased 13x9 in baking dish.

Bake at 350 degrees for 30 minutes or until thoroughly heated.Remove from heat. Using description I used, Sprinkle top with remaining cheese, bacon and chives!
