Gingerbread Cookies
ingredients
Cookie Ingredients:- 1/4 cup butter or margarine softened
- 1/2 cup firmly packed brown sugar
- 1/2 cup dark molasses
- 3 1/2 cup all-purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/4 cup milk *always requires a little more
- 1 1/2 cups sifted confectioners sugar
- 1/4 t. vanilla
- whipping cream
- food coloring

1. Cream butter in a large mixing bowl. Gradually add brown sugar, beating well. Add molasses, beating until well blended.

3. Sift together flour, soda, cinnamon, ginger, salt, cloves, and nutmeg. Sift again and add to creamed mixture alternating with milk, beginning and ending with flour mixture.

5. Wrap dough in waxed paper or Saran and chill for one hour.

6. Roll dough to 1/4" thickness on lightly floured surface. Make cut-outs and place on lightly greased cookie sheet.

7. Bake at 350° for 8 minutes or until crisp. Cool on wire racks.

6. When you’re ready to make icing: Blend the sifted sugar with food coloring and vanilla with just enough cream to make a good consistency in the tube.
