Dave Taylor's Turkey Chili
Low in calories and delicious!
ingredients
- 1 Small Can Tomato Paste
- 1 LB Ground Turkey
- 2 T. Vegetable Oil
- 3 Cloves of Garlic
- 1 1/2 Cup Onion (minced)
- 1 1/2 Tsp Dried Oregano
- 1/2 Tsp Dried Basil
- 1-2 T. Chili Powder
- 1/2 Tsp Ground Cumin
- 1/4 Tsp Ground Red Pepper
- 2 Cups Zucchini (finely chopped)
- 1 Cup Carrots (finely chopped)
- 1 Can of Garbanzo Beans (drained and rinsed)
- 1 Can Kidney Beans (drained and rinsed)
- 5 1/2 Cup Stewed Tomatoes (drained)
- 1/4 Cup Brown Sugar
- 4 Cups Water

In a large soup pot (4 qt. minimum) brown ground turkey over medium heat. Add oil and saute garlic and onion until tender. Season with oregano, basil, chili powder, cumin and red pepper. Mix well. Add zucchini, carrots and green pepper cook for 2 minutes.

Add garbanzo, kidney beans, and stewed tomatoes along with the water and brown sugar. Bring to a boil and then reduce heat to simmer for 45 minutes. Add tomato paste after it is all cooked. You can add 1/2-2/3 of the paste depending on the consistency you are looking for.
