Sautèed Squash Medley
Great in the summer, or in the winter.
ingredients
- 2 Tbsp. butter
- 1 Tbsp. olive oil
- 1 large red onion, peeled, halved and sliced
- 2 medium zucchini, cut into matchsticks
- 2 medium yellow squash, cut into matchsticks
- 1 Tbsp. chopped fresh dill
- 1 tsp. Italian seasoning

In skillet over medium-high heat, cook butter and oil 1 minute.

Add red onions, zucchini and yellow squash; cook 5 minutes, or until vegetables are fork-tender, stirring frequently.

Add chopped dill and Italian seasoning. Season with salt and pepper, if desired.
