Fiesta Banana Cake
Sylvia’s cake she makes for Jim. His favorite!
ingredients
- 3 cups sifted flour
- 1 1/2 tsp. baking powder
- 1 1/2 tsp soda
- 1 1/8 tsp. salt
- 2 cups sugar
- 1 1/2 tsp. vanilla
- 3/4 cup shortening
- 3/4 cup buttermilk or sour milt
- 1 1/2 cups mashed bananas
- 3/4 cup chopped nuts

Measure flour, baking powder, soda, salt, and sugar into sifter. Place shortening in mixing bowl; stir to soften. Sift in dry ingredients;

Add 1/2 cup of milk and mashed bananas. Mix until flour is DAMPENED. Beat 2 minutes in mixer at low speed or 300 vigorous strokes by hand. Add the eggs, vanilla, nuts and remaining milk.

Beat one minute more

Pour into two round large pan, lined on bottom with paper. Bake in moderate oven (350) about 35-40 minutes. Cool. Spoon whipped cream between layers and on top of cake. Garnish with bananas.
